Ice cream shop in Old Town to open after all

MANKATO — After making a last-minute decision to not open an ice cream shop in Old Town, the owners of Mom & Pop’s say they’ve decided to open the business this winter.

Erin and Tammey Gatchell bought a building and spent years renovating it and equipping it. But even as they were training staff for an opening this spring, the couple decided the pressures of running the business along with family obligations and operating another business — Gatchell Imaging Products — was too much.

“It was unrealistic for me to be as involved with Mom & Pop's as we had originally planned,” Tammey Gatchell wrote on the Mom & Pop’s Facebook page Monday.

They put the business up for sale but had no takers.

“Over the summer, we rearranged our current business operations to better suit operating two businesses. With that, we have chosen to move forward with the opening of Mom & Pop's sometime this winter.”

She said they are developing a staffing plan that will allow them a balance between family and work.

No opening date has been set.
